In an effort to provide healthier food for my family, I am following recipes from Eating Light magazine for the next few nights.

Last night, I made

chicken

1/2 cup sweet or bitter orange marmalade ( I went w/ sweet)

2 Tbsp chili powder (mild, hot, or a mix of both)

1/2 tsp salt

8 chicken drumsticks (2 1/4 lb) I actually only used 6, b/c that’s what came in a pack.

1. Heat oven to 400 degrees. Line a rimmed baking sheet with nonstick foil.

2. Mix marmalade, chili powder, and salt in a large ziploc bag. Add chicken; seal bag. Turn and squeeze bag to coat drumsticks. Arrange on lined baking sheet, spooning on any excess marmalade mixture.

3. Bake 25 to 30 minutes until cooked through.

Serves: 4    Prep: 5 min    Bake: 25-30 min.     Cost:  $4.24 (I already had the chili powder & salt.)

Per serving: 370 cal

Overall, I found these to be pretty tasty. Jaxon and Marty loved them. The chili powder was a bit much for me. I like sweet, Marty likes spicy, so it suited him just fine. Maybe next time, I will add a little more marmalade.

Super easy and fast to make, which is high on my priority list when it comes to cooking. Also, not many ingredients which is always a plus when it comes to grocery shopping with two little ones. The less on my list, the better.

Day 3 of the 30 Day Shred: Sore, Sore, Sore. If I hadn’t made this vow to the Internet, I totally would have skipped today. But, I pushed through it, and am glad  I did.
