We started family night about a couple of months ago. Don’t plan on hanging with us on a Wednesday night, because we have a big game of Candy Land to play. Last night was the first of 2010, and it turned out to be full of lots of laughter.

For dinner we had

1 jar (26 oz) triple mushroom pasta sauce (I used pasta and green pepper sauce)

2 bags (13 oz each) frozen square cheese ravioli, thawed

1 1/2 cups shredded Italian cheese blend

1. Heat oven to 375 degrees. Coat a 9-in. square baking dish and a sheet of foil with nonstick spray. Put pasta sauce in a bowl; stir in 1/2 cups water.

2. Spread 1 cup sauce in dish. Top with 20 ravioli (or 1/3 of the total), flat sides up and just touching each other. Spread with 3/4 cup sauce; sprinkle with 1/2 cup cheese.

3. Repeat layers once. Top with remaining ravioli, sauce and cheese. Cover tightly with foil, sprayed side down.

4. Bake on a sheet of foil (to catch any drips) 1 hour or until bubbly around edges. Uncover and bake 5 min. until cheese is barely golden.

Serves: 6     Prep: 10 min     Bake: 65 min    Cost: $9.20     Per serving: 414 cal

This was delicious! And, once again, easy and fast to prepare and only a few ingredients. Just my style. We have over half left for tonight’s dinner as well. This is a keeper!

After dinner, we played a roaring game of Tumblin’ Monkeys.

And, ate warm cookies. Which totally goes against the healthy eating, but it was family night. We do it for the kids. Wink. Wink.

After we put this fella to bed, we ran a race through the house, occasionally giving high fives as we rounded a bend. Lastly, we all climbed into Jaxon’s tent and ate plastic food.

Jaxon finally got the nerve to sleep in his tent all night. He read his Bible by lantern. Very sweet. (Needless to say, I am totally ready to get this thing out of my living room. And, at this moment I am actually sitting in this little tent.  )

It was a fabulous evening, and I am so happy that we designated a night for this sort of fun. Jaxon finds it to be very special. Well, he is special, and that’s what makes this night so wonderful.

Day 4 of the 30 Day Shred: Haven’t put on my tennis shoes yet. Once I publish this, I will role out the mat and grab my weights. Jillian, here I come.
